ooohhh yummy!!!

I made the most yummy thing yesterday: CHEESE SLAW!!!

It was delicious so I decided to share the recipe with you.  It’s kind of like pimento cheese only slightly less processed and way less goopy. Not that I don’t love pimento cheese. Really I do. It’s all pimento-y and cheesy, what’s not to love?

Back to the cheese slaw.  You need:

1 pound shredded cheese (I used jack and cheddar blend)
1 bunch green onions with tops, chopped
1/2 cup chopped mild banana peppers
1/2 cup chopped jalapeno peppers(optional)
enough mayonaise to bind the ingredients together

Mix the first four ingredients together then add the mayo.  Yummy!!!

You can eat it on a sandwich or spread it on crackers.

And for those of you who actually read my rambling yesterday-they cancelled the scrimmages at the other school.  I suspect that the other team’s field was so wet that they were afraid it would ruin it!  Stay tuned, Saturday is the jamboree!


Yay-Happy ending!

I have raised a Phoebe.  I love Lullibell dearly and one of  her most endearing qualities is her LOVE of happy endings.  She only wants to watch movies with happy endings, read books with happy endings.  Everything must end justly with all of the “good” characters living happily ever after. Much like Phoebe on Friends-remember how she thought Ol’Yeller had a happy ending…and Bambi…I wish life was all happy endings.

Over the weekend I watched a movie I wanted to tell you guys about.  If you haven’t seen Julie and Julia you really should. Funny, sweet and a relatively happy ending…I just wish I could cook like Julie-she was brave enough to try all of the recipes in the book. I don’t think I could pay my family to eat some of the things in that cookbook!  And the things you learn about Julia Chiles-I really had no idea what a saucy, naughty thing she was!

Steak—because…well…just because I really just enjoy a good steak…and strawberries…

This kind of question is always difficult for me because I want you to think I am a smart person. But I also want you to like me and think I am a fun person, not stuffy. And I also want you to see that I am a spiritual person. And I have a miserable time making up my mind…yaaaharrgghhhh! So I am going to say JK Rowling. Because I love her writing and I know she has survived raising children and…

3. What does your perfect breakfast-in-bed look like? (Food AND the details, please. Candles? Music? Flowers? Hot tub? Dancing girls?

Lots of chewy thick cut bacon, fried eggs and grits. Coffee and cream. Quiet…just quiet…

4. What do you consider the best application of whipped cream to be?

5. Oh-God-No, Biff, the yacht is sinking! You are sent to the galley to retrieve the food. What luxury food items do you snatch first? The champagne? The caviar? Smoked Salmon? Truffles? Chocolate? Or something else?

SAVE THE CHOCOLATE!!!! Grab the wine and some chips and dip! I’m not big on the luxury food!

Sweet and sour meatloaf on the stove top

I was talking to my friend over at transplanting me about how her family is doing without having an oven. See I happen to know that her oldest is a true epicurean. The boy loves good food. The problem being that most of his favorite dishes require baking. I told her that the other day when I was making Lullibel’s favorite dinner-chopped steak-that I had what may have been a stroke of genius.

What if you made the hamburger mixture for meatloaf but then make patties out of it and add the sauce at the end to caramelize around the patties?

I am going to post my recipe here and if anyone would like to try it go ahead and let me know how it turns out for you. This recipe is my mom’s original and is absolutely delicious!

Sweet and sour meatloaf

1.5 lbs ground beef
1/2 c. club cracker crumbs
1/2 small onion chopped
1/2 can tomato soup
salt and pepper to taste
1 egg
mix and form into loaf. bake @400 for 45 minutes. remove from oven and drain grease. top with sauce and bake 15 minutes.
1/2 can tomato soup
1/2 can water
2 T yellow mustard (the sandwich kind)
2T brown vinegar
2T brown sugar

I think if you make this as patties on the stove top the sauce would probably need less water. Just make sure to combine the ingredients well before pouring the sauce over the patties or loaf!


I’ll admit it. I am a lemming. You know, the little rodents that get themselves all whipped up in a frenzy and jump off a cliff together! At least a blog party sounds lik a heck of a lot more fun!
